I set up a “Blog” page and chose that page as my posts page. However, right now the blog posts are showing up as full blogs one after another. I’d rather they have a single photo and a short blurb to look more organized. How can I make this happen?

The two options that are available to you for the front page (the first page seen when going to your website) when using WordPress are a static front page or a posts page. The option provided in the customization section under Advanced lets you choose what page or latest posts to display. If you want to only show a short blurb and a picture, then you should probably choose the static page option. You can create a separate page for that purpose and then choose it in the Advanced > Static Front Page option.
